Slovak Christmas Soup

I have fond memories of enjoying this soup every Christmas with my family. Every spoonful brings me back to my childhood and our Christmas Eve dinners. I do not know the real name of the soup, but for me it will always be Christmas when I eat it.

Ingredients

1 Can sliced mushrooms

1 qt. Sauerkraut juice

3 qts. Water

1 Cup Rice

1 tbsp Butter

1 Small onion, chopped

1 tbsp Flour

Salt and pepper to preference

Small amount of sauerkraut to add to the soup

Preparation & Cooking Instructions

Mix sauerkraut juice and water. Bring to a boil and add mushrooms, rice, and a small amount of sauerkraut to the soup. Melt butter in a skillet and add onion and flour.  Brown well and add to soup. Stir well and simmer for 1 hour. 

Tip: Use with less water at first and reserve some juice. If it’s not sour enough you can add the reserved juice or add more water if it is too sour. When it cools down it will thicken.  You can add more juice to thin it out if desired.
